Start to explore all the articles written about this subject on the internet
The first that came up on google:
http://www.wavecor.co.uk/tutorial.htm
http://www.pctechguide.com/tutorials/LPtoCD.htm

Get the gear up and do some trial and error testing.

Ripping refers to converting audio tracks on a CD into files at a faster speed than real time. That isn't possible with vinyl or cassette. The only way you can record from your record or cassette player is if your PC has a microphone or line-in jack, which most PCs have. Then you need to get software that lets you make recordings real time. I like to use Goldwave. Once you record them real time on the software, you then save them as files (.mp3 or .wav) and burn them onto CD using a program like CDCreator.

Are you sure thats the definition of "rip". When I use EAC to "rip" an old scratched CD it can take 5 hours to "rip" 1 hour of music (due to error correction etc).

Well the more correct term may be "transfer to " or "record to"
