I Hustle to just about any good Disco recorded from '75 to about '82 and some fairly modern music (Madonna, INXS, LeAnn Rimes!?) as well.
I particularly like "The Hustle" by Van McCoy (of course), "Freakout" and "Good Times" by Chic, "Forget Me Nots" by Patrice Rushen, I could go on and on :D
"After Dark" (128 BPM?) by Pattie Brooks is good for a fast Hustle.
Actually, I think I could keep a dance floor full for a good 2 or 3 hours with the Hustle/Disco music I've collected over the years.

I nominate HEY GIRL, COME AND GET IT by the Stylistics, from 1974, as a good example of hustle-disco.
Around 1998 there was a website where the 1975 Van McCoy version of this was available to hear. I thought at the time, "Wow, this sounds so familiar, but it couldn't be THIS version I recognize, as it sounds rather silly and it wasn't a pop hit like THE HUSTLE... How can it be that I already know it?" Then some years later I rediscovered the original Stylistics version and realized that I had remembered the melody and particularly the "oompa oompa oompa oompa" almost 2 decades later.
Mine is The Jacksons, Show You The Way To Go. At least it was the song I partially learned how to do it. I was never as good at it at some people. My girlfriend at the time knew how to do it well and was trying to teach me with that song.

It's got to be "Never Gonna Let You Go" by Jobell & The Orchestra de Salsa because the hustle is a latin kind of dance and Jobell has the right moves. Dee Dee Bridgewater's "My Prayer" is equally good. This 1976 track is not about jesus freaks, it's sassy and hot and dramatic, perfect for the choreographed stylizations of the hustle, plus the vocals of DeeDee would make you dance even if there were no beats. And she looks great in the cover.

The Hustle was the LAST great couples dance. Sure, perhaps it was a fad though I don't really think so because those who Hustled sincerely enjoyed it for the exhuberant experience that it IS.
Hustle is still very popular today, though it has undergone many changes over the past 25 years and the "New York Hustle" (what I did? in '75 - '78) The "Latin Hustle" and the "Tango Hustle' are all now just the "Syncopated Hustle"
or "Disco Swing" as some people call it.
You haven't lived until you've Hustled (with a competent partner) to our favorite Disco classics AND some modern dance music (especially House and Euro House).
The "Night Fever" Line Hustle in "Saturday Night Fever" I remember as "The Bus Stop" :D

American kids have always looked for ways/new ways to move with our significant other (I describe this in an Urban Northeast heterosexual context) to our favorite music (DooWop from the '50s, Rock 'n Roll and MoTown from the '60s AND DISCO from the '70s).
Hustle dancing was the last great couples dance expression of this great American tradition.
As a key part of this we have had, since the end of WWII, an illegal drag/street racing culture (Hot Rods, Muscle Cars!!!! Choppers) that is integral to the American dating scene to this day. :D
