Ahh, there are so many :D But I always thought the breakdown on "Scorpio" by Dennis Coffey was supreme, I used to play this over and over back then, and Vickie Sue's "Turn the beat around" is also great.

Scorpio - Dennis Coffey was one of my favorite's that I used to play as a 45 RPM/7". Played it so much that I had to clean it with alcohol (remember those days?) Or, when you had no mixer, you'd bring the needle quickly back to the spot to self mix it.

Samba Soul: "Samba Soul" a Disco-remake of "Mas Que Nada".
Mike Theodore Orchestra: "The Bull"

Do What You Wanna Do definitely is the one that comes to mind when thinking of disco grooves with timbale breakdowns.
I can only think of a few examples, most of which lean more to funk:
'Miami Heatwave' by Seventh Avenue
'All Time Loser' by Barbara Pennington
'Sugarhill Groove' by The Sugarhill Gang (courtesy of Tito Puente)
'Ritual' LP by Nico Gomez - full of breaks and bad ass latin funk grooves. Lots of timbales.

I think the timbale/conga solo on 12" live version of The Bottle - Gil Scott Heron is the best - I do like the T-Connection - Do What You Wanna Do as well
