Don't know about the best, but two I can think of at this moment that I like are:-

Charles Earland - Let The Music Play.....for its blistering, really jazzy electric piano solo

Dominic Troiano - We All Need Love.....for its uplifting synth solo

I think there's a little piano solo on the intro of ''Manhattan Shuffle'' by Extensions From Area Code. I think it's from 1979. It's a very good disco song sung by man.

I like the real piano of ''Hero'' by Captain Sky. I think Captain Sky is French (?)

I love the modest piano intro to the Joubert Singers' "Stand on the word".
Nice piano intro (and break) on Mort Shuman's "You're my man", & on THP Orchestra's "Weekend two-step".

In the '80s department, I recommend keyboards in the following tracks(because they're really prominent and active in setting the mood:
Comateens: "Don't come back",
Magazine 60: "Don Quichotte",
Skipworth & Turner: "Thinking about your love", & "Can't give her up"

On a very different and irrelevant note, I've also always loved the piano-driven "Peanuts theme". Oh, and Elton John's "Song for Guy"

The king, for me, is the piano solo toward the end of the 12" version of T-Connection's "At Midnight".

Honorable mention, the piano breaks that occur occasionally past the mid-point through the end of Love Deluxe's album version of "Here Comes That Sound".

For me it has to be the exquisitely played piano solo break in "Make That Feeling Come Again" by Beautiful Bend, Boris Midney.

I agree, TDK, that is one of the prettiest piano parts on a disco record.

Man, how did I not think of that one!! The strings & vocals are so overwhelming I'd forgotten about the piano solo. Brilliant!!
